It’s always a thrill to scan the bookshelves of independent bookstores, in our region, in search of books written by local authors or ones that have subject matter or locations on Georgian Bay. In addition to supporting these bookshops, it’s also important to support our local literary arts communities. Over the past months, we have, once again, enjoyed searching for books that have ties to the Georgian Bay region and were amazed to discover the broad range of genres they embraced. Her daughter Bonnie Rourke edited and assembled these weekly columns in creating this book. Turning the page…Up the Shore, The Lighthouse Years, tells the true story of Frank and Juanita Rourke while living at three lighthouses, the Westerns, Great Duck Island and Cape Croker, during the mid-twentieth century. It’s a very interesting read as it chronicles the daily lives of this lighthouse keeper and his family, providing a window into the joys and challenges of life on Georgian Bay. Title: On Foot to Canterbury: A Son’s Pilgrimage; Author: Ken Haugh GB Connection: Ken Haugh now lives in Clarksburg, near the shores of Georgian Bay, having previously lived on Baffin Island as well as in China and Bhutan. He is a freelance writer and librarian. Maple Sponge Toffee Safety Tips This recipe is intended for adults due to the high liquid temperatures. It is important to never leave your pot unattended. Special Equipment Candy thermometer Silicone spoon or scraper Whisk Wire rack Ingredients For Sponge Toffee 450g (2 cups) sugar 360g (1 cup) corn syrup 140g (½ cup) maple syrup 3 teaspoons malt vinegar 3 ½ teaspoons baking soda For Toppings 225 g semi-sweet chocolate Topping options: Sliced almonds Shredded coconut Toffee bits Mini chocolate chips Chocolate and vanilla sprinkles Finely chopped tree nuts or peanuts Instructions 1) Line a 25cm by 33cm (10” by 13”) cake pan with foil or parchment paper and spray with cooking spray. 2) Measure out your baking soda and set aside. Combine sugar, corn syrup, maple syrup and malt vinegar in a medium saucepan. Heat ingredients on a medium high heat stirring constantly until it reaches a temperature of 295 degrees F (146 degrees celsius). 3) Remove the pot from the heat and vigorously whisk the baking soda into the hot liquid until well combined. 4) Quickly pour the content into the prepared pan. Let the toffee cool, undisturbed for a minimum of 2 hours. Break into pieces. For Coating 1) Hint- If you temper your chocolate, it will have a smooth and glossy appearance. Finely chop chocolate. 2) Place ⅔ of the chocolate in a double boiler. Gently heat until the chocolate melts and reaches a maximum temperature of 120 degrees F for dark chocolate and 105 degrees F for milk chocolate. 3) Remove from the heat, add the rest of the chocolate and stir until melted. 4) Dip one end or the entire piece of toffee into the melted chocolate and sprinkle or dip in desired toppings. Place on a wire rack and allow to cool. ........................................................................................................................................................................................... Grandmère Robitaille’s “Glissantes” with Chicken and Spring Vegetables Glissantes are like a small, flat dumpling prepared in broth. The variation of vegetables that may be added are endless. A variety of recipes have been handed down throughout the decades, by families living in the Georgian Bay region. Ingredients for Glissantes: · 2 cups all-purpose flour · 3 eggs · ½ cup milk · 1 teaspoon salt · 1 teaspoon baking powder Ingredients for chicken and broth: · 800 grams boneless chicken · 3 tablespoons olive oil · About 4 tablespoons white flour · ¼ teaspoon cracked fennel seeds · Salt & pepper · 100 grams (1 ½ cups) chopped leeks (prewashed, white & light green parts only) · 70 grams (about 1/4 cup) finely chopped carrots · 1-2 cloves fresh garlic finely minced · ¼ teaspoon celery seed · 1 cup white wine · 1800 ml chicken or vegetable broth (for store purchased- 2x 900ml boxes) · 400 grams slim, spring carrots (about 15), cleaned and cut in half lengthwise · 150 grams green French beans · 215 grams (about 16 spears), asparagus · ½ cup heavy cream (optional) · 2-4 tablespoons chopped flat leaf parsley (garnish optional) · 2 tablespoons chopped dill (garnish optional) How-to Prepare the chicken and broth: 1. Season and dust the chicken lightly in flour. 2. Add olive oil and fennel seeds to a heavy casserole. Heat the oil to medium and add seasoned chicken. 3. Brown all sides of the chicken. 4. Add leeks, finely chopped carrots, garlic and celery seed to casserole. Cook on low until leeks are translucent. 5. Add white wine and approximately 1 ½ cups broth. Add lid to pot and simmer chicken slowly for about 25 minutes, until cooked through. 6. Once chicken is cooked, remove from broth and using two forks, shred chicken or cut into large pieces. 7. Return chicken to pot. Add remaining broth. 8. Add carrots and cook until softened but not mushy. Add asparagus and green beans. Cook until tender (about 2-3 minutes). 9. Add glissantes and cook on medium for about 5 minutes, just until they rise to the top and slightly thicken the broth. If using cream, fold in at this point. 10. Add salt and pepper to taste. 11. For serving, garnish with chopped herbs such as flat leaf parsley and chopped dill. How-to Prepare the Glissantes: 1. Sift the flour, salt and baking soda. 2. Add the eggs and milk. Mix the dough using your hands until the dough comes together and is smooth (don’t over knead). 3. Cover the dough and let rest for 30 minutes. 4. To cut the dough, flour your surface and using a rolling pin, roll your dough to about 4mm thick. 5. Cut dough into strips, about 3mm x 4mm. 6. When ready, add the glissantes to the broth and simmer for 5 minutes. This delicious vegetarian dish may also be prepared vegan. Ingredients for Glissantes: · 2 cups all-purpose flour · 3 eggs · ½ cup milk · 1 teaspoon salt · 1 teaspoon baking powder Ingredients for mushrooms and broth: · 200 grams (1 ½ cups) chopped shallots · 1-2 cloves fresh garlic, finely chopped · 1 ½ tablespoons fresh thyme · Salt and pepper (to taste) · ¼ teaspoon celery seed · 3 tablespoons olive oil · 800 grams variety of Mushrooms (white button mushroom, crimini, shiitake, oyster, enoki, porcini…), cleaned and sliced · 1 tablespoon butter or non-dairy butter substitute · 1800 ml mushroom or vegetable broth (for store purchased- 2x 900ml boxes) · 1 cup (a handful!) of thinly sliced swiss chard (chiffonade) · ¼ cup sweet peas (frozen or fresh) · ½ cup heavy cream (optional) · 2 tablespoons freshly squeezed lemon juice · Lemon zest (garnish optional) · 2-4 tablespoons chopped flat leaf parsley (garnish optional) · 2 tablespoons chopped dill (garnish optional) 1. Add olive oil to a heavy casserole. Cook on low and add shallots, garlic and celery seed. Cook until shallots are translucent. 2. Add mushrooms and thyme. Cook to remove liquid and develop flavours. 3. Add butter and brown mushrooms. 4. Add white wine and mushroom broth, simmer on low for about 20 minutes. 5. Add swiss chard, fresh peas and cream. 6. Add the rest of broth, bring to a simmer and add the glissantes. 7. Cook glissantes for about 5 minutes, just until they rise to the top and slightly thicken the broth. Add salt and pepper to taste. 8. Add cream and stir through gently. 9. Add swiss chard, fresh peas and freshly squeezed lemon juice. Cook on low only for about 1 minute until warmed through. 10.
