Using this recipe as our inspiration, we have added our own spin and favourite ingredients. Aunt Pearl’s Butter Tart Recipe Makes 2 Dozens Ingredients for the Crust 5 cups of all purpose flour 3 heaping teaspoons of baking powder 1 teaspoons salt 3 tablespoons of brown sugar 1 pound vegetable shortening 1 egg+ white vinegar to make 1⁄2 cup of liquid water Ingredients for the Filling 4 tablespoons butter 2 cups brown sugar 1⁄2 cup corn syrup 2 teaspoons vanilla 4 large eggs Chopped pecans or raisins Instructions - Generously spray two muffin tins with cooking spray and set aside. - Whisk the dry ingredients together. - Use a pastry cutter to cut in the begetable shortening until the mixture resembles coarse crumbs. - Crack one egg into a measuring cup and pour white vinegar into the cup until the liquid reaches the 1⁄2 cup mark. - Beat the egg until well combined. - Top the liquid with water to reach the 1 cup mark. - Gradually combine the liquid ingredients into the dry with a fork until it begins to form moist clumps. If the dough is too dry, gradually add a little extra water. Turn the dough onto a floured surface and form into a ball. Cut into four and form into flat disks. - Cover with plastic wrap and refrigerate for at least 1 hour. - Roll the dough out to a thickness of about 3mm. - Cut with a round cookie cutter into circles that are slightly larger (2 - 3 mm) than the circles on the muffin tin. - Put raisins or nuts in the bottom of each tart shell. For the Filling - Melt 4 tablespoons of butter. - Mix in the next 3 ingredients. - Beat eggs until light and fluffy and add to the sugar mixture. - Fill prepared tart shells 3⁄4 of the way. Do not overfill or they will overflow. - Bake at 350 degrees for approximately 20 minutes or until golden brown. - Allow to cool 15 to 20 minutes before removing from the tin. Our interpretations Lisette gave her tarts a fun twist, by adding one of her favourite homemade confectionaries—peanut brittle. Gabriella's tarts are asian-inspired since she added black sesame to her crust, miso and sesame in the filling and finished it with a black tea infused cream! Denise added rich homemade salted hazelnut, chopped hazelnuts and chocolate to her filling for a chocolatey-rich flavour. Yum! Danielle added chopped nuts and graham crumbs to her filling and finished it with nanaimo bar filling for her own take on two favourite combined classics!
